The few things I've read aboout it people complain about the skin so this way seems like a good idea. I notice from the pic you have bone side down, correct? Leave 'em like that the whole time? Enjoyed the article, thx. Exactly, Bone side down and I don't touch 'em until they're done. Just keep the temp in that 225-250 range and all should be fine.
