Hand Whipped Mayo

As I mentioned yesterday, here's the hand beaten version of mayonnaise. And as Bier mentioned, it is better than the blender version if slightly more time consuming and physically demanding.

I made one too many lobsters at a family cookout yesterday, so today's dinner was. . .wait for it. . .LOBSTER ROLLS. Shelled all the lobster meat, minced the celery and capers, reached for the Hellman's and WHOA did it smell funky. Rather than do the sensible thing and run to the store, I decided to break out the whisk and try my first ever batch of home made mayo.

 

Final result was a success, most importantly in that it didn't break (was totally expecting failure). As for the flavor, I will say it did have a bright vinegar/lemon/egg flavor that was more pronounced than a store bought. However, it wasn't the transcendent experience I was expecting.

 

Oh, and my arm hurt for about half an hour after.

keep some potatoes handy, wrap your hands around them in between beatings, it will keep you limber, old family secret.

 

this thread really needs to get moved to the tailgate.
