Orange Roughy

I typically eat lunch with my brother or my wife, but both are out of town. Today was real slow at work, so I went to the grocery store to get something to grill. So I saw a nice looking orange roughy fillet, so I bought it, some yellow squash, zucchini, onion, and mushrooms. GAnyway, I've never grilled roughy, but wow I lucked out. I actually cooked one of the best pieces of fish I've ever had.

 

No measurements, but squeezed a lemon out all over the fillet then just dusted each side with the following:

 

garlic powder

cumin

cayenne pepper

black pepper

sea salt

 

Grilled it for 2 1/2 to 3 minutes per side.

 

 

Now I have a bunch of pieces of thinly sliced eye round roast on the smoker at about 180 degrees. Jerky later tonight.

I always oil fish before I grill it, other wise it will stick. Some fish is difficult to grill some isn't. Basically, the bigger the flakes when cooked, the easier it is to grill. Cod, Halibut, Haddock, Mahi Mahi, Chilean Sea Bass, and Salmon all work well on the grill. Tuna works great as well, but you only want to sear it and leave the inside raw IMO, otherwise, you might as well by a can of it. There are plenty of other fish that work well, these are just to give you an idea.

 

perch, that's a great way to do fish. Next time, try finishing it with a little puttanesca (tomatoes, onions, olives, capers, anchovies) or a tomato/chipotle in adobo puree.
