Kid Cid
It's been Cinco de Mayo week on my blog so here's a couple of traditional Mexican recipes to help you celebrate the festivities. There also a post in there about the history of Cinco de Mayo. Notably, it is a bigger celebration here in American than it is in Mexico. I also hope to have a couple more for you tomorrow. Perchoutofwater
Do you have anything for the Cinco de Quatro celebrations? I'm thinking pickled pigs and chitlins with salsa on top, or something like that. Edited April 29, 2010 by Perchoutofwater

Tortilla Soup Flan FWIW, the state of puebla is the area in Mexico that takes the holiday most seriously since it commemorates a battle won there. Mole Poblano is a classic dish from that region, as is Chiles en Nogada (picadillo stuffed peppers covered in walnut cream sauce and pomegranate seeds). However, Chiles en Nogada are actually specifically linked to St. Augustine's day (I think that's the name) so that might be double dipping. Gonkis
This isn’t a terribly hot mix but to tone it down a bit, substitute jalapeno peppers for the Serranos... If a japaleno tones it down, what the fudge is a Serranos? Edited May 10, 2010 by Gonkis
Kid Cid
If a japaleno tones it down, what the fudge is a Serranos? A serrano pepper is a bit hotter than a jalapeno but has better flavor IMO. It is no where near as hot as a habanero. Click here for a listing of relative pepper hotness.
Big Country
Serranos have great flavor. When I want to kick up my guacamole, I use some very finely diced serranos instead of jalapenos.

The heat was bad enough in my mouth, but nothing compared to my nose as I touched the tip of my nose by accident with my finger that had the oils on it. The heat was ridiculous. Gonkis
Imagine if you peed without having washed your hands beforehand. Horrible. It literally felt like someone was holding a flame under my nose. Everyone else got quite a kick out of it, but I was trying to stick my nose in a milk jug. Speaking of peppers... I love getting the mild banana peppers on subs from Subway. They have been out of them in Northeast Ohio (2 locations that I visited, anyway) for weeks. They claim the warehouse is out of them, but I wonder if they are removing them from the menu altogether. We've been out in Arkansas as well.
