Looking to do a twist in traditonal 'slaw...

Keeping with the Asian slant. Ours at Jujube uses the holy trinity of fish sauce, rice vin, and sweet chili. Which, btw, would work well with any fruit inclusion and also lightens things up because there's no mayo involved. Not that I have anything against mayo, of course.

Sorry it took me so long to get back to this.

 

1 medium head green cabbage, sliced very thin (note: I use my mandolin with a setting of less than 1/8" thickness to slice up the cabbage. The cabbage will stay crisp with this recipe and if it is too thick it will be difficult to chew.)

1/2 cup sugar

1/2 cup ketchup

2 tsp kosher salt

2 tsp ground black pepper

2 tsp Texas Pete

 

In a large bowl, combine all the ingredients except the cabbage. Add the cabbage then toss to coat. Chill for 2 hours before serving.

Somewhat similar:

 

Napa cabbage

rice vin

orange juice

honey

EVOO

toasted sesame seeds

cilantro

 

Goes great with a grilled chop.

What is Texas Pete?

It is a brand name of a hot sauce. This is comparable to another hot sauce on the market called Crystal. You could substitute Tabasco but it has a touch more heat and a decidedly thinner consistency. You could also substitute other Mexican hot sauces such as Cholula.

I like the Cholula, it's got a nice smoky flavor.

You should use it in Gorilla Fart form:

 

cold shot of vodka.

top with hot sauce.

shoot.

 

no need for snorting.

I prefer the Prairie Fire version. Swap out the Vodka for Tequila. Enjoy.
