gilthorp Posted September 25, 2010 Share Posted September 25, 2010 I recently followed a recipe that called to steam the wings for 10 minutes, let rest in the fridge for an hour, then simply roast them in the oven, 20 minutes per side at 425, and then toss in whatever sauce you make. I found a hot Mole and a Tiger sauce and blended with the chillis and the rest of the ingredients. had to use honey, too lazy to go to the mexican grocery store here, and used a smidge of bbq sauce (sweet baby ray's) for sticky thicky ... the Mole gives it a slightly added crunch to the sauce.
