Barbacoa for thanksgiving

I've braised my share of beef/pork/veal cheeks if that's what you're asking. Maybe the tastiest braised meat going. Pretty simple actually, you just need to brown it a bit, cover it with stock and seasonings and put it in the oven for a few hours.

Don't get me wrong, I'm familiar with barbacoa, but around here, that basically means slow roasted or braised beef cheek. Either that or barbacoa de <<blank>> which basically means slow roasted whatever.

 

I was just making sure the translation carried over. I know what people in your region have done to BBQ.

I'm talking about taking an entire cow head and slow cooking it in the oven. I suppose I have to keep it wrapped in foil and somehow keep it wet.

 

Dig a hole in the ground. Start a fire with oak wood. Throw abunch of medium sized stones in there. Keep the fire going for about an hour and let it render down to coals. put the cow head in either a large kettle with some aromatics or wrap in tin foil and place on a steel grate that is elevated above th stones and coals. Bury this in the dirt. Wait three hours. Cow head should be done...

You are a sick individual and beef does not = BBQ...
