whomper
We were at a Christmas party last weekend and a friends of mine made Coquito. It was absolutely delicious. I haven't had it in many years and really enjoyed it. I asked him for the recipe and he sent me the below info. See below the recipe for my question 5 egg yolks beaten 2 (12oz) can evaporated milk 2 (14oz) can cream of coconut 2 (14oz) can sweetened condensed milk 1 cup white rum 1 cup water 1 teaspoon cinnamon 2 teaspoon vanilla _____________________ In large pot water, cinnamon, egg yolks, evaporated milk - medium heat, stir, bring to a boil, remove heat Add cream of coconut, sweetened condensed milk, vanilla and rum place in blender for 30 seconds and chill. (This makes a lot more than what the blender holds. I added the rum after blending and still had to blend a little at a time) My Question I was just looking to make a batch . Maybe a blender full to bring to a small party or to have at my house. It seems the above recipe makes enough to supply a much larger group. How would you cut down the increments for a smaller batch ? Edited December 26, 2010 by whomper
Bier Meister
as is...looks like it makes a little more than 56 oz. try halving it (or making 1 1/2 batches)
