Watercress

About 30 years ago my Aunt planted some watercress in a natural spring on my Dad's place. Since then it has gone crazy and we have tons of it, I have to chop alot of it out because its so thick it chokes out the spring. I tried some of it and...meh. But I really dont know the proper use of it. Any, one have any good recipes or ideas for it?

How did you do the oil. Just put the leaves in olive oil? Did it put off alot of the flavor? Cause the watercress we have the flavor is really mild.

 

 

3/4 watercress, 1/4 parsley (for color), warm oil in a blender. blend. strain through cheese cloth.......i would do this overnight through a cheese cloth and chinoise into a container to hold it.
