fingfootball Posted March 11, 2011 Share Posted March 11, 2011 About 30 years ago my Aunt planted some watercress in a natural spring on my Dad's place. Since then it has gone crazy and we have tons of it, I have to chop alot of it out because its so thick it chokes out the spring. I tried some of it and...meh. Cause the watercress we have the flavor is really mild. 3/4 watercress, 1/4 parsley (for color), warm oil in a blender. blend. strain through cheese cloth.......i would do this overnight through a cheese cloth and chinoise into a container to hold it. detlef Posted March 11, 2011 Share Posted March 11, 2011 Simply dressed with lemon juice, good olive oil a healthy dash of salt and some ground pepper it's pretty damned delicious.
