Rovers Posted May 24, 2011 Share Posted May 24, 2011 So, swordfish was on sale, and I bought a steak. I'm thinkin a marinate would be good. Wrong. White wine, garlic, cumin, soy sauce, ginger, freshly chopped cilantro, lemon juice and marinated for a couple of hours, grilled and what did I get? A slab of fish that didn't even taste fishy. It could have been a club steak, a chuck steak, a shoe pad. Never could taste the swordfish. Lesson learned. Sometimes, just cook the chit. Taste the flavor of what the heck it is you bought at the market in the first place. Baloney marinated like this might not taste very different. Hugh B Tool Posted May 26, 2011 Share Posted May 26, 2011 My favorite is to simply grill the Swordfish steaks for about 5/6 minutes a side. Only brush Olive oil and salt and pepper before grilling. After I like to put a lemon pesto on them(adding the zest and juice from one lemon to your favorite pesto recipe).
