Anyone have a good gazpacho recipe?

If you don't know, gazpacho is a FANTASTIC Spanish cold soup, made mostly with tomatoes and cucumbers that is terrific on a hot day (and for hangovers).

 

Unfortunately, I have no recipe. Anyone able to lend a hand?

i haven't made it in a while, but i have a good one....

 

yield: 2 1/2 qt

 

2 1/2 lb of tomatoes (peeled and chopped)

1 lb cucumbers (peeled and chopped)

8 oz onions (peeled and chopped)

4 oz green peppers (peeled, seeded,and chopped)

1/2 tsp crushed garlic

2 oz fresh white breadcrumbs

1 pt cold water or tomato juice

3 oz red wine vinegar

4 oz olive oil

salt to taste

pepper to taste

cayenne or pepper sauce to taste

lemon juice to taste

 

 

blend all ingredients in a blender (except s&p, cayenne, lemon juice) until liquified. add those final 4 ingredients. chill the soup.

 

if you like use the following as garnish:

2 oz diced onion

2 oz diced cucumber

2 oz diced green pepper

Kind of a pain to prep but here it is:

 

 

 

2.5 cups tomato or veg juice

1 cup peeled, seeded, finely chpped frest tomatoes

0.5 cup finely chopped celery

0.5 cup finely chopped cucumber

0.5 cup finely chopped green onion

3 tablespoons white wine vinegar

2 tablespoons extra virgin olive oil

1 large clove garlic, minced

2 teaspoons finely chopped fres flat-leaf parsley

0.5 teaspoons salt

0.5 teasponns Worcestershire sauce

0.5 teaspooons freshly ground black peeper

 

 

 

 

Combine cover and refergeriate overnight...

 

 

 

Edit to add: 10 tablespoons of Crisco and 5 sticks of margerine as garnish or appetizer.

I finally got myself around to making it - I used Bier's as my template.

 

I tend to be a "wing it" fella in the kitchen (when someone asked me how long to cook something or other on the grill, I famously replied "oh, about two and a half beers"), so most of my stuff wasn't that well measured. Anyway, it broke down to 3 medium tomatoes, 1 lg cucumber, 1/4 of a med red onion, 1 clove garlic, 1 pt tomato juice, 4-5 oz white wine vinegar, wife used up all the olive oil :mad: so I used veggie oil (don't hunt me down and kill me), about 1 1/2 oz fresh white breadcrumbs, 1/8 of a yellow pepper (again, wife used all the green peppers).

 

Came out with a nice consistency, but needed a bit more kick so I cheated and dumped some onion and garlic powder in. As it stands, it's a tad garlicky - not an issue for me, but I'm sure some might not be into it.

 

I think it turned out pretty well for a first effort. Maybe next time I'll go shopping before I start making it so I have all the ingredients...

so many variations on most recipes...... i gave you a classical recipe.

 

playing is the fun part. personally, i love cilantro and use it a bit at home .... think that would have added a nice flavor to it...
