Got a crock pot for Christmas and am lookin forward to cookin somethin in it, anyone have a good recipe? I wouldn't mind doin a roast but I'm sure that's fairly easy (although I've never cooked one), any suggestions would be appreciated, even for a roast, but somethin different would be great. Maybe a good chicken dish or somethin.

My dad makes the best Italian beef in his crock. He starts with a good roast, a jar of jalepeños with juices and seasonings; oregano, pepper, salt etc. It all goes in the crock about 6am and slow cooks all day and falls apart. Keep it moist for a while till it starts to breakdown.
Some fresh Gonella rolls and your golden. It reheats good too with a bit of H2O the next couple days.

Some nice pasta with gravy always goes well on the side.

He does this every year for big football games when we're over for the day.

1 lb little smokies (in the hot dog section at your grocer)
1 bottle barbecue sauce
1 jar of currant jelly

heat on low for several hours

Here you go ChuckB-I'm a caterer in Florida and what is always a hit is Beef Burgundy or Bourguignon-basically it's a Beef Stew with Red wine--I'll throw a recipe at you for 4 servings--
cup of Dry red wine
2 T ofolive oil
1 Large yellow onion
teaspoon of thyme
2 T of chopped parsley
2 pounds beef --stew -roast-cube it toabout 1inch per piece
3 pcs diced thick cut bacon
12 pearl onions or just cut up another white or yellow
1/2 pound sliced mushrooms
4 T of minced garlic
salt-pepper

1-combine 1st seven ingredients, mix well, add beef -then cover and
refrigerate for 3 hours
2-drain meat and reserve marinade
3-cook bacon bits then add beef to brown on all sides
4-combine beef-bacon-veggies -salt-pepper in cooker-pour reserve
marinade over to cover
5-cook on low for 10- 12 hours

Meat should be very tender at this point-if not continue to cook - until it falls almost apart-side dish is usually mashed potatoes or rice-good luck
just double or triple the recipe if you want more

i'll come up with something for you within a day or so...

i'm a fan of beef bourguignonne

in the same vein you could do a coq au vin, osso bucco, etc.

i thin PD does a weekly bit about crockpots.....

laughing.gif My mom makes thesed things for a lot of family gatherings. I ate so many as a kid, I hate the dang things now. My kids pig on them though.

Absolutely! I would love a good chili recipe, keepin in mind it can't be too hot, the children have to eat it too. g-thinking.gif Actually I could make them somethin else.

my wife and i really like the crockpot. 2 things we do very frequently are chili and coca cola pork carnitas. both recipes we have are tasty and very easy. let me know if you are interested.

alright, here ya go:

coca-cola carnitas

2-3 lb. pork roast
1 medium onion
1 jalapeno pepper
1 can coke

1. cut meat into 2 inch cubes
2. slice onions/pepper
3. put meat/onions/pepper in crock pot
4. pour in soda
5. cook on low for 8 hours
6. notice how good house smells all day
7. shred pork

it's great for sandwiches, by itself, leftovers, etc. i usually eat mine with a bit of HP sauce on top, i'd highly recommend this. fyi, the onions and peppers are very cooked down by the time it's over so if you want onions on top at the end, i suggest frying a few in a pan. pretty much anything can go with this, the other night we made scalloped potatoes and they were very good together. let me know what you think.

chili

1 lb. ground beef
1 c. chopped onion
1/2 c. green pepper
4-5 jalapeno peppers
1 clove garlic
29 oz. can diced tomatoes
15 oz. can tomato sauce
3 cans of beans
**we use 1 each of black, kidney, and white - it's excellent**
2 1/2 Tablespoons chili powder
1/2 teaspoon ground cumin
salt and pepper to taste

1. slice/dice onion, pepper, garlic
2. cook onion, pepper, meat in oil until brown
3. add all ingredients to crock pot
4. cook on low until you can't resist eating it
(this is unofficial of course, it usually takes 4-5 hours to be chili-esque and probably about 6 until it's really nice. just stir it every once in a while and keep an eye on it.)

sidenote: someone mentioned not wanting to make it too hot. if you want a basic, good-tasting but not warm chili, go with only 3-4 jalapenos and use only 2 T. of chili powder. the recipe above is warm, but not bitey. i like that tickle in my nose, so i usually go with 5 jalapenos and about 3 1/2 T. of chili powder. so depending on your taste, you have 3 variations there to go with. the one listed above is probably right in the middle.

well, i'm thinking that's a good thing. i hope you enjoyed it. i am thinking that more meat could be added with a little more soda and onions. probably cook it for another hour or two, but obviously i haven't tried this yet.

I LOVE venison roasts in the slow cooker...

My wife makes a Sausage and Cheese Queso in there with a block of Velvetta cheese.

I'm making Mac & Cheese in the crockpot. Thought about baked but wanted something that will stay warm.

16oz. macaroni, cooked and drained (I'm using shells instead of elbow)
4 tbsp oil
2 - 13oz. cans of evaporated milk
3 cups milk
2 tsp salt
32oz. (1 box) Velveeta, cubed
1 cup grated cheddar cheese
1/2 cup melted butter

Toss cooked macaroni with oil
Add all remaining ingredients
Pour into lightly greased 6 quart crock pot
Stir well
Cover
Cook on low 3 - 4 hours, stirring occasionally


I really wanted a recipe that only used real cheese (and found several, however some of the reviews were negative as far as creaminess of the cheese in the crock pot). We shall see.

i got mine in at about 7 this morning. i love the way it makes your house smell all day. i've done it the night before once, and it was still good, but not quite the same.

Rhip, chili turned out good. I cut down on the jalapenos and chili powder cause I wasn't sure if everyone would be OK with spicy, I knew there were a few that definitely didn't like spicy. I liked it and next time I make it for myself I'll bump up the jalapenos and chili pepper.

Here is a good chicken chili recipe - this won't be too spicy for the kids at all . . . but if you like heat you could easily crank it up by using hotter peppers or some cayenne.

White Chicken Chili

2 ½ - 3 lbs skinless, boneless chicken breast
4 Tbsp taco seasoning
3 or 4 Tbsp olive oil
1 large onion, finely chopped
3 cloves garlic, minced
2 fresh jalapeno chilis, seeded and minced
1 lb bag of white (navy) beans, or 4 – 15 oz cans – if using dry beans (preferred) boil them for 2 minutes then cover and let stand for one hour, or soak overnight
1 tsp chili powder
1 tsp cumin
½ tsp salt
½ tsp black pepper
2 can chicken broth
1 cup shredded Monterey Jack cheese, plus additional for garnish
Sour cream
Fresh cilantro leaves, chopped
Fresh tomatoes, chopped

1. Slice chicken into 1-inch chunks; sprinkle with 2 Tbsp of the taco seasoning; toss to combine

2. Warm 1 Tbsp oil in a large skillet over medium high heat. Working in batches brown chicken for 2 minutes per side.

3. Warm 1 Tbsp oil in same skillet over medium-low heat. Cook onion, garlic and jalapeno 2 minutes, stirring. Add beans, chili powder, cumin, salt, and peppers; cook 2 more minutes, stirring.

4. Add chicken and bean mixture to crockpot; stir in 1 ½ cans of the broth and remaining taco seasoning. Cover and cook on low for 6 to 8 hours.

5. Stir in 1 cup shredded cheese – depending how thick or thin you like it you may want to add the other ½ can of chicken broth here. Cook another hour.

5. Top servings with sour cream, chopped cilantro, tomatoes, and additional shredded cheese.

This is great the next day and also makes tee-riffic chicken burritos. Add a little chicken broth (or water) when you re-heat it.

Solid point. Once you past the food stage, it's hard to go back, especially if you pack it in early on like me.

We have tried 2 different chicken and dumplings prepackaged freezer things and they have both been very good. I love making homemade chili in the crockpot the best though, that and pot roast with poatoes and veggies...mmmmmmm

highly recommend rhippens Coca-Cola Carnitas, the whole family ate too much. definently a great change in taste for pork sandwiches. the only way i'm used to makin pork was bar-b-q and terioki so this was perfect, the kids and wife still added bar-b-q to there bun but i liked it straight-up. next time i make it, i'm adding more jalipeno to get some more spice, just used about 3/4 of one so i would'nt blow the kids away but the overall flavor was AWESOME...everyone wants leftovers tonight, it's a keeper........thanks

i am on a freakin crock pot roll, as ghey as that sounds, props to Elronds white chicken chili, wife took leftovers to work and they all want it. more of these reciepts for crock pots would be great to see. easy to fix, walk away,enjoy.
