Planned for 2 weeks to prep 4 racks of ribs on the smoker all day today, then finish them off tomorrow. Forecast calls for rain all day today so that's scrapped and I'm starting over from scratch. I'm thinking maybe a jambalaya. . . think.gif

This year it is just the wife and myself so I'm making grilled salmon with a spicy chipotle sauce.

kids got burned out on Mexican Dip (hamburger/Velvetta) & BBQ Lil Smokies.....but last season i had ta work every sunday so they didn't get it......Yesterday they asked if they could have it again biggrin.gif

Today it is raining and will just go to the deli and get some good cold cuts, fresh breads and cheeses. No outdoor action for me.

Hey, don't sell yourself short. Costco makes a darn good pizza.

Home made hummus and baba ghanoush with pita, olives and feta.

Then super spicy Moroccan Chicken and Couscous.

Just finished some Swedish-style meatballs for dinner (making the mashed potatoes later).

Broiled a couple ribeyes for lunch.

I wound up making a truly outstanding Spinach Dip. Only change was I subbed out the artichoke hearts and added snow crab meat.

Also served venison summer sausage and cheese, deviled eggs and turkey salad sandwiches.

Awesome.

Tomorrow will be big bone in chicken breast stuffed with jalepeno (skin on and spicy crunchy on the outside and very moist inside) along with angus burgers, the usual velveeta rotel dip and blue corn chips and oven baked beans.

And I got my Vodka with strawberry kiwi before the liquor store closed.

tomorrow.... just hanging around to watch football.... making 1st fondue of the season staying with the spirit of Oktoberfest.
