First day the sun has shown itself in two weeks. I"m pretty much caught up at work, so I took the day off and fired up the old smoker. Using oak, pecan, and mesquite. Sitting out by the pool watching the hawks fly by and checking the temp every so often. It just doesn't get much better than this.

anyone ever use Liptons onion soup mix as a rub? .....when ma made brisket in the oven she'd use that

I can't say that I have. That doesn't mean that it wouldn't be good, I just personally try to stay away from things that have more chemicals than spices in them. Mixing my own let's me tailor the flavors just the way I want to.

How well does pecan wood work Perch?

I have usually just used mesquite or applewood . . .

Pecan is a nice wood, not as strongly flavored as mesquite or hickoy even. I tend to use a mix of pecan and apple on pig. I can't say that I've used it on beef.

I use oak and mesquite on beef.

It is 7:00 am on Saturday morning, and the brisket has been in the smoker for an hour now. Sometime around noon I'll add 4 slabs of spare ribs. I was going to the Texas OU game but my daughter has a make ups soccer game, so I gave up my tickets, and decided to make the best of it, so I fired up the pit.

kids & food are more important then hard body coeds and tuna chaps ........right
