Are you f'ing kidding me? That title alone should have you drooling. A not so subtle twist on one of Chef Paul Prudhomme's classic recipes. This is good stuff.

nice i have done something similar with ground goose and andouille sausage.

This sounds seriously good although I may substitute clams for oysters as I'm not an oyster fan.

There so much going on in the stuffing that 1) you probably won't notice the oysters or 2) won't seriously impact the taste by going with clams instead. Actually, I encourage you to make the change and report back on your findings.

I don't think this stuffing would work for a jalapeno. Try the Atomic Buffalo Turds instead for a stuffed jalapeno.

The portabello is just exactly the right texture and flavor to compliment this stuffing. If you want to finish it the way Chef Paul did, he took flounder filets, lightly dusted them with flour and seasonings, put a layer of this stuffing on them, rolled it, then pan fried them in butter.
