are you guys considered butchers or would ya call yourself one? caught "Butchers" Modern Marvels last night and it was pretty interesting along with all the slaughter house stuff

i am no expert with my butchery. i am pretty good with meat and fowl... don't do a lot of fish. with me it just takes a little repetition (2-3 of whatever) to get back into the swing of things.

this 1 guy had a mobile butcher shop where he showed up at the farm, shot the cow drug it in the trailor and he said he could dress the whole thing in 2 hrs FDA guy was there too

Pretty much. I'm really, really fast with birds (not dressing them, mind you, just butchering an already dressed bird). Good enough with meat and about the same with fish. Like Bier, with some, it just takes me a bit to get it back. I don't spend much time in the kitchen anymore.
