Gonna be in Vancouver for a few days, looking for suggestions downtown.

We are adventurous eaters so please don't suggest a steakhouse. The midwest has PUHLENTY of those.

Vancouver is one of my favorite cities in the world. Have a great time!

Off the top of my head:

DB Bistro Moderne / Lumiere: Boulud. Enough said.
Fuel: Little of this, little of that, all good.
Tojo: Sushi
Bluewater cafe & raw bar. (in yaletown area. Yaletown is a cool area to hang out in with plenty of bars so I end up at Bluewater often).
Cioppino's: Italian & Mediterranean
Vij's: Indian
Bishop's: only been once. Didn't live up to its reputation, but I'd give it another shot.
Go Fish on Granville Island. You should go to Granville just for the market anyway.
