I wouldn't mind doin a roast but I'm sure that's fairly easy (although I've never cooked one), any suggestions would be appreciated, even for a roast, but somethin different would be great. He starts with a good roast, a jar of jalepeños with juices and seasonings; oregano, pepper, salt etc. It all goes in the crock about 6am and slow cooks all day and falls apart. Keep it moist for a while till it starts to breakdown. Some fresh Gonella rolls and your golden. It reheats good too with a bit of H2O the next couple days. Sir Loins of Beef Posted January 18, 2006 Share Posted January 18, 2006 Here you go ChuckB-I'm a caterer in Florida and what is always a hit is Beef Burgundy or Bourguignon-basically it's a Beef Stew with Red wine--I'll throw a recipe at you for 4 servings-- cup of Dry red wine 2 T ofolive oil 1 Large yellow onion teaspoon of thyme 2 T of chopped parsley 2 pounds beef --stew -roast-cube it toabout 1inch per piece 3 pcs diced thick cut bacon 12 pearl onions or just cut up another white or yellow 1/2 pound sliced mushrooms 4 T of minced garlic salt-pepper 1-combine 1st seven ingredients, mix well, add beef -then cover and refrigerate for 3 hours 2-drain meat and reserve marinade 3-cook bacon bits then add beef to brown on all sides 4-combine beef-bacon-veggies -salt-pepper in cooker-pour reserve marinade over to cover 5-cook on low for 10- 12 hours Meat should be very tender at this point-if not continue to cook - until it falls almost apart-side dish is usually mashed potatoes or rice-good luck just double or triple the recipe if you want more Quote Link to comment Share on other sites More sharing options...

rhippens Posted January 20, 2006 Share Posted January 20, 2006 alright, here ya go: coca-cola carnitas 2-3 lb. pork roast 1 medium onion 1 jalapeno pepper 1 can coke 1. cut meat into 2 inch cubes 2. slice onions/pepper 3. put meat/onions/pepper in crock pot 4. pour in soda 5. cook on low for 8 hours 6. notice how good house smells all day 7. shred pork it's great for sandwiches, by itself, leftovers, etc. i usually eat mine with a bit of HP sauce on top, i'd highly recommend this. fyi, the onions and peppers are very cooked down by the time it's over so if you want onions on top at the end, i suggest frying a few in a pan. pretty much anything can go with this, the other night we made scalloped potatoes and they were very good together. let me know what you think. rhippens Posted January 20, 2006 Share Posted January 20, 2006 and... chili 1 lb. ground beef 1 c. chopped onion 1/2 c. green pepper 4-5 jalapeno peppers 1 clove garlic 29 oz. can diced tomatoes 15 oz. can tomato sauce 3 cans of beans **we use 1 each of black, kidney, and white - it's excellent** 2 1/2 Tablespoons chili powder 1/2 teaspoon ground cumin salt and pepper to taste 1. slice/dice onion, pepper, garlic 2. cook onion, pepper, meat in oil until brown 3. add all ingredients to crock pot 4. cook on low until you can't resist eating it (this is unofficial of course, it usually takes 4-5 hours to be chili-esque and probably about 6 until it's really nice. just stir it every once in a while and keep an eye on it.) sidenote: someone mentioned not wanting to make it too hot. if you want a basic, good-tasting but not warm chili, go with only 3-4 jalapenos and use only 2 T. of chili powder. the recipe above is warm, but not bitey. i like that tickle in my nose, so i usually go with 5 jalapenos and about 3 1/2 T. of chili powder. so depending on your taste, you have 3 variations there to go with. the one listed above is probably right in the middle.
