Sides to go with meatball sandwiches

Doing dinner/late lunch with my father in law tomorrow. I asked my wife to make her family's recipe for meatballs. I was planning on doing it witrh pasta and garlic bread, but she decided to do subs instead. We were talking in the car today and neither is really sure what sides to do with them, as we usually just make the sandwiches for lunch and not really for a sitdown type dinner. So, any reccomendatios?

1st things that came to mind were pasta salads... could do 3 types:

 

one with pesto, diced tomato, shreaded parm

 

one with artichoke hearts, kalamata olives, feta, a little olive oil

 

one with mixed tortolini, diced roasted red peppers, jullienne zucchini, a little italian dressing

Serves a couple table-loads of people, but bam! it tastes yum!

 

3 pounds broccoli (about 2 small bunches), florets cut into bite-size pieces (about 7 cups)

1/4 cup lemon juice from 2 lemons

1/2 teaspoon grated lemon zest

Table salt

1 medium clove garlic , minced or put through garlic press

1/2 teaspoon red pepper flakes

1/2 cup extra-virgin olive oil

1 pound short, bite-size pasta such as fusilli, farfalle, or orecchiette

20 large black olives , such as kalamata or other brine-cured variety, pitted and chopped

15 fresh basil leaves , shredded

 

1. Bring 4 quarts water to boil in large pot over high heat. In a seperate pot blanch broccoli in boiling salted water until crisp-tender, about 2 minutes; drain and cool to room temperature.

 

2. Meanwhile, whisk lemon juice and zest, 3/4 teaspoon salt, garlic, and red pepper flakes in large bowl; whisk in oil in slow, steady stream until smooth.

 

3. Add pasta and 1 tablespoon salt to boiling water. Cook until pasta is al dente and drain. Whisk dressing again to blend; add hot pasta, cooled broccoli, olives, and basil; toss to mix thoroughly. Cool to room temperature, adjust seasonings, and serve. (Can be covered with plastic wrap and refrigerated for 1 day; return to room temperature before serving.)

A meatball sub sounds kind of heavy and messy... maybe a lighter side would go well, like a fresh fruit or something like that.

Ging basically without a set side dish... doing light appetizers that will double as the sides, like veggies and dip, chips and salsa and such.

if you're looking for a quicky dessert--hit Walmart or Sam's--fruit platter or frozen cut up fruit put in a bowl an add vanilla yogurt or honey. Plan B get a large bowl an layer fruit ---shortcake(ladyfinger,sponge cake),layer of whipped cream-drizzle rum over then repeat--refrigerate for two hours--serve
