rajncajn
i have had it, but have not made it. did a bastardized creole.... i may have posted it (will search) My great aunt used to make it fantastic and a local restaurant that was here years & years ago was the best I've ever had. Since then I've had a hard time finding a good source. Few people make it around here anymore & fewer make it well. sundaynfl
so do i...... i add salt and pepper as i cook. with salted butter it removes control of seasoning from you (you can add, but can't take away) Unless you add peeled potatoes to draw the salt out. Kid Cid
I can't quit laughing ... what wine would you pair with crap scampi? mad dog 20/20? Sloe Gin? I believe that a 2006 Ripple that has been left open on the side of the road long enough a for a dog to pee in it would be a good match. Scooby's Hubby
Hey, Ripple was a big part of the show. I bet the word Ripple was said on 90% of the episodes.
SteelBunz
Hey Bier....at the restaurant, we added capers to the white wine butter.....then finished off the whole dish by sprinkling a 4 cheese Italian blend over the whole thing in the pan before plating. Yummy! 4 cheese blend - Parm, Asiago, Romano and Mozz. For you non-Italians......lol. Edited September 10, 2011 by SteelBunz
