SheikYerbuti Posted March 21, 2010 Share Posted March 21, 2010 20 cloves of garlic 1/4 cup olive oil 1 tbsp cumin 1 tbsp black peppercorns 1 tbsp oregano 1/2 cup white wine juice of 2 limes juice of 1 lemon 1/4 cup orange juice 1 packet Sazon Blended all of the above until liquified. SheikYerbuti Posted March 23, 2010 Author Share Posted March 23, 2010 Results: Roasted the butt for 9 hours until the bone pulled right out, then removed all the meat from the fat and skin. In a large dutch oven, I heated a few tbsps of oil and seared some rough chopped onion. Then added the meat. Made a 2nd batch of the marinade in the OP and added it to the pot, cooked it until the alcohol cooked out and was slightly thickened. Then served with rice and black beans. NOM.
