Shelled all the lobster meat, minced the celery and capers, reached for the Hellman's and WHOA did it smell funky. Rather than do the sensible thing and run to the store, I decided to break out the whisk and try my first ever batch of home made mayo. Final result was a success, most importantly in that it didn't break (was totally expecting failure). As for the flavor, I will say it did have a bright vinegar/lemon/egg flavor that was more pronounced than a store bought. However, it wasn't the transcendent experience I was expecting.
