Bier Meister Posted April 6, 2010 Share Posted April 6, 2010 #1 6 (1/4-inch-thick) boneless pork loin chops 1/3 c sugar 1/4 c finely chopped shallots (about 2) 1 tbs fresh lime juice 1 tbs Asian fish sauce 1/2 tsp salt pound chops between 2 large sheets of plastic wrap with flat side of a mallet until less than 1/8 inch thick. make several small 1/4-inch-deep slits around edge of each chop to prevent curling, then half chops lengthwise and transfer to a bowl. cook sugar in a dry saucepan over med heat undisturbed until it begins to melt. continue to cook stirring occasionally with a wooden spoon until sugar is melted into a golden caramel. add shallots, lime juice, fish sauce, and salt (caramel will harden) and cook, stirring constantly, until caramel is dissolved and shallots are softened, about 2 minutes. pour sauce over pork and toss until well coated. grill pan over moderately high heat until hot but not smoking, until just cooked through about 1 minute per side. discard any remaining caramel sauce. #2 4 pork loin chops (each about 1/2 inch thick) 1/4 c soy sauce 1 tsp veg oil 1/2 c chopped onion 1 tbs chopped, peeled fresh ginger 1 tsp minced garlic 1 c coarsely chopped pitted sweet cherries season pork lightly with pepper. place in shallow baking dish. pour soy sauce over them. turn chops to coat. cover; chill 1 hour, turning occasionally. heat oil in small skillet over med heat. add onion, ginger and garlic; saute until onion is almost tender, about 5 min.. add cherries; saute until cherries begin to soften, about 8 min. remove from heat. season with salt. grill pork until cooked through, about 4 min per side. transfer to plates. spoon relish over. i'll ad some more later............ Perchoutofwater Posted April 6, 2010 Share Posted April 6, 2010 Whole pork loin 1/2 cup Soy Sauce 2 cups Brown Sugar 1/4 cup Garlic powder 1/4 cup black pepper Mix ingredients in a bowl then rub onto the pork loin. Whole pork loin1/2 cup Soy Sauce 2 cups Brown Sugar 1/4 cup Garlic powder 1/4 cup black pepper Mix ingredients in a bowl then rub onto the pork loin. Rap the loin in foil and grill until almost done. Unwrap for the last 10-15 minutes. Perch, approximately what temp do you have the grill running at, at how long does it take for it to be "almost done"?
