When I cook steaks, if someone asks for a well done one, they will never get steak at my house or for that matter with me buying at a restruant. Technically, the inner rare portion of a good cut of meat should have never been exposed to ecoli. The outer portions are seared or cooked to kill any bacteria. Just so you know. I just have a thing about whether the meat is a "good" cut or not. And did the cook just throw it on the grill for a minute or two? Was that sufficient to kill the E. Coli?? Yeah, I now agree that steak sauce is ruining the steak, but, I find 'medium' to be flavorful. Maybe I'll give 'Medium Rare' a try though. Azazello1313 Posted July 7, 2006 Share Posted July 7, 2006 rare, meduim-rare, or medium -- depending on things like my mood, what kind of steak, who's cooking it, etc. the flavor is fine and the texture is still pretty good at medium. goes downhill quickly after that though. the perfect medium rare, where the center is not totally raw but just warmed a little bit, is pretty much optimal IMO.
