Sometimes I get a little tired of hot dogs, hamburgers, chicken, ect. Anyone have some simple meals that you can cook over the fire or something? TIA Speedies Upstate NY are great over a grill, Lamb kabobs, pork tenderloin or premake stuff like carbonara and just warm it up ofer the fire! Jimmy Neutron Posted May 26, 2007 Share Posted May 26, 2007 In a dutch oven: 10-12 thick sliced potatoes 1 lb, cooked, crumbled bacon 1 large chopped onion 1 cup sour cream S&P Cook these for about 40 minutes over medium coals, then add 2 cups of your favorite shredded cheese and cook for another 10 minutes. Buy some Reynolds wrap aluminum foil and lay out 2 sheets on your counter. Lay out some pretty good size sheets. Slice up some uncooked chicken into bite sized cubes. Slice up some carrots, potatoes, green peppers, onions, etc. Place everything onto the foil. Put a little bit of olive oil and your favorite spice onto the meat/veggies. Wrap up the foil. When you get the fire going, just put the foil on the cooking grate. About 40 minutes later, it's done. Camper's stew. Excellent eats and easy. You can also do this with hamburger or chunks of steak. Yep, You don't even need the grill. This is how my Dad does it: Cut a big deep X in the top the onion/potato. Stick a slice of butter in each leg of the X. Salt and pepper liberally, wrap in foil and stick it on the outer edge of your campfire, near the coals. Do it first thing cuz it takes a while, and spin them a few times during cooking. By the time you get your steaks/chicken/fresh caught trout done, they will be perfect. Another tasty treat is to pop a couple holes in the top of a can of button mushrooms, and stick it next to your onions & potatoes half way through the cooking. When you are ready to serve, open lid, drain them, toss with butter, S&P and a pinch of red pepper flake, and pour them on your steak. Awesome.
