policyvote Posted January 3, 2011 Share Posted January 3, 2011 Actually got the idea from a thread in this forum to do an upscale Green Bean Casserole. I make a punched-up bechamel, with shallots, ground clove, and nutmeg. Then I cut and blanch a bunch of fresh green beans, and saute a mixture of Athenaake and oyster mushrooms in butter. Then I caramelize a buttload of vidalia onions. I toss the blanched beans with the shrooms and lay them in a casserole pan. I pour the bechamel over it all, then layer the onions, grated parmesano-reggiano, and breadcrumbs on top to make an onion-heavy crust. I bake it until done and then broil a minute or two to brown the top. Since trying this for one Thanksgiving a few years ago, it has been requested at every Thanksgiving (by all families) ever since.
