detlef Posted November 18, 2011 Share Posted November 18, 2011 Cooking fish in paper (en papillote) is a great idea. Easy and clean. Here's a video showing how to do it. It's imperative that you get a really good seal on the envelope you create because the whole thing is that it puffs up and the steam is not allowed to escape. Then, you cut it open at the table.
