PantherDave Posted October 4, 2007 Share Posted October 4, 2007 Well, this week will be a recipe that I loved-I pretty much followed it to the letter this time around and was very satisfied with the outcome. Meatball Stew 1 lb extra lean ground beef 1 egg 1 cup dried bread crumbs 2 med onions, chopped 3/4 teaspoon of salt 1 can(14.5 oz) low-sodium diced tomatoes, undrained 1 can (10.5 oz) fat-free, low-sodium beef broth 1/4 teaspoon dried thyme 1/4 teaspoon oregano 3 carrots, scrubbed and chopped 1-2 stalks celery, chopped Step 1- In a med bowl, combine beef, egg, bread-crumbs, half of the onions, and salt. Shape mixture into very small meatballs. Step 2-Brown meatballs in non-stick skillet over med-high heat. Step 3- Mix remaining ingredients in CP. Spoon in meatballs and stir gently. Step 4- Cover and cook on High 3-4 hrs or low 6-7 hrs. Serve over your desired type of Pasta.....I went with Thin Spagehtti and also warmed up some regular Tomato sauce to spoon over as well. Great with some Garlic bread and a tossed salad......add a nice Red wine and your good to go!!!!! Now for some football- I like the Chargers to get their second win of the season in Denver......if they don't....stick a fork in them.
