PantherDave Posted March 12, 2007 Share Posted March 12, 2007 Prep-25 min Cook- 3 1/2 to 7 Hrs 1lb to 1 1/2lb pork loin chops(boneless) 2 large sweet taters, peeled and cut into 1"pieces 3 medium parsnips, peeled and cut into 3/4" pieces 2 Granny Smith apples cored and cut into wedges 1 medium onion,cut into thin wedges 3 cups veg broth 1 Tbsp packed brown sugar 1 Tbsp Dijon-style mustard 1 1/2 tsp dried thyme, crushed 1 tsp of bottled minced garlic 1/2 tsp crushed red peppers 1 12oz can of beer(I like regular Michelob) 4 large Roma tomatoes, cut up Step 1- Trim any excess fat off the chops. Cut meat into 3/4" cubes. Lightly coat large skillet with cooking spray; heat over med-high heat. Add meat; cook until meat is light brown. Set aside. Step 2- In 5 to 6 qt CP(you can fit it into a 3 1/2-4 qt w/1lb meat), combine sweet taters, parsnips, apples, and onion. Add meat. In medium bowl, combine broth, brown sugar, mustard, thyme, garlic, and crushed red pepper-mix well. Pour broth mixture and beer over meat and vegs. Step 3- Cover and cook on at desired time and temp(see above). After stew is done stir in Roma tomatoes-wait 5 mins-Chow Down.
