Smoke out

My buddy is throwing a smoke out this evening (everyone must being something they smoked). I've decided to try something different from the traditional pork or beef though. My contribution will be beer brined smoked trout and a smoked ring of homemade polish kielbasa. I'm using cherry wood for my smoke. Trout is on now, when it's done I'll throw the kielbasa ring on. I'm so looking forward to see how this comes out.

Put 3 racks of spares in my smoker about 20 minutes ago. Always used cherry but the place I buy them was closed yesterday. Had to hit Kmart and all they had was mesquite and hickory. Went with the latter. A quick lunch and the cold ones come out. Life is good. :wacko:

Discovered something wonderful last night. Not only did the trout and kielbasa come wout wonderful, but served with crackers and a horseradish cheddar cheese they were out of this world! A really big hit at the party.
