policyvote Posted August 21, 2008 Share Posted August 21, 2008 Okay so I should have gone to bed a couple hours ago, but perversely I cannot sleep. I've had the idea of 'breakfast sushi' (as opposed to a breakfast burrito) bouncing around in my head . . . I just took a stab at it and it was super tasty. It of course wasn't really sushi at all, basically just a seafood omelette cut into 'rolls'. Anyway, here's what I did: * took a big shallot, chopped it fine, and lightly caramelized it * sauteed some fresh bay scallops in the leftover oil and with some fresh rosemary (because it was there) * sliced a nectarine thinly and evenly * made an omelette * filled it with the shallot and scallops * laid two slices of nectarine on the filling * laid down a stripe of my favorite Teriyaki sauce (Veri Veri, by Soy Vay) * folded/rolled the omelette * cut the omelette into 'sushi rolls' Everything but the last step worked really well. Seriously though this was pretty tasty--a LOT better than my usual late-night culinary experiments. Any other similar ridiculous creations? When I can't sleep I take lots of trips to the fridge and have a few bites of this or that, which don't really work together at all. Like I'll eat a pickle, then 10 minutes later a bowl of cereal. Or sardines, and then a yogurt. A few spoonfuls of ice cream, then wash it down with a soda.
