I"m pretty much caught up at work, so I took the day off and fired up the old smoker. Using oak, pecan, and mesquite. That doesn't mean that it wouldn't be good, I just personally try to stay away from things that have more chemicals than spices in them. Pecan is a nice wood, not as strongly flavored as mesquite or hickoy even. I tend to use a mix of pecan and apple on pig. I can't say that I've used it on beef. Sometime around noon I'll add 4 slabs of spare ribs. I was going to the Texas OU game but my daughter has a make ups soccer game, so I gave up my tickets, and decided to make the best of it, so I fired up the pit. Another one I like to do is German potato salad. I have a pretty good recipe if you are interested, it is actually one of the few things I actually have a written recipe for. Kid Cid Posted December 1, 2009 Share Posted December 1, 2009 Collard greens are pretty simple to make. Get a bunch then simmer in a pot with a hunk of salt pork until soft, maybe 25 or 30 minutes. While potatoes are boiling, dice bacon and fry in and iron skillet until crisp then add diced onion and cook until tender. In a small bowl mix sugar with flour, salt and pepper. Pour dried goods into skillet with fried bacon and tender onion. Add water and vinegar and stir unitl smooth and simmer a few minutes. Drain potatoes and then pour everything over them. Serve hot.
