The brisket is on the smoker.

First day the sun has shown itself in two weeks. I"m pretty much caught up at work, so I took the day off and fired up the old smoker. Using oak, pecan, and mesquite. Sitting out by the pool watching the hawks fly by and checking the temp every so often. It just doesn't get much better than this.

anyone ever use Liptons onion soup mix as a rub? .....when ma made brisket in the oven she'd use that

 

I can't say that I have. That doesn't mean that it wouldn't be good, I just personally try to stay away from things that have more chemicals than spices in them. Mixing my own let's me tailor the flavors just the way I want to.

How well does pecan wood work Perch?

 

I have usually just used mesquite or applewood . . .

 

 

Pecan is a nice wood, not as strongly flavored as mesquite or hickoy even. I tend to use a mix of pecan and apple on pig. I can't say that I've used it on beef.

It is 7:00 am on Saturday morning, and the brisket has been in the smoker for an hour now. Sometime around noon I'll add 4 slabs of spare ribs. I was going to the Texas OU game but my daughter has a make ups soccer game, so I gave up my tickets, and decided to make the best of it, so I fired up the pit.

great weather / great mondaynite matchup :D gettin coals goin/rub on brisket :D what sides are a winner?......think i did potato and creamy cukes last time...want somethun different :wacko:

I am always a big fan of some type of bean dish to go along side BBQ. Also, the traditional collards done with a spicy vinegar sauce always works.

Beans whether they be baked beans or like I did this past weekend, a mixture of kidney beans, pinto beans, jalapenos, onions garlic, and left over pork shoulder. Another one I like to do is German potato salad. I have a pretty good recipe if you are interested, it is actually one of the few things I actually have a written recipe for.

Collard greens are pretty simple to make. Get a bunch then simmer in a pot with a hunk of salt pork until soft, maybe 25 or 30 minutes. Remove the salt pork and drain half the liquid. Add back 1/2 cup cider vinegar. Sprinkle with red pepper flakes. Serve warm.

8 medium potatoes

8 strips of bacon

2 medium onions

6 tbs of sugar

2 tbs of flour

2 tbs of salt

1 tbs of pepper

1/2 cup of vinegar

2 tbs of water

 

Boil potatoes until tender. While potatoes are boiling, dice bacon and fry in and iron skillet until crisp then add diced onion and cook until tender. In a small bowl mix sugar with flour, salt and pepper. Pour dried goods into skillet with fried bacon and tender onion. Add water and vinegar and stir unitl smooth and simmer a few minutes. Drain potatoes and then pour everything over them. Serve hot.
