Cleaned, you should expect to pay ~$8/lb, if you don't mind separating the two steaks from the silver skin that runs down the middle you can expect to pay less than $5/lb. At the restaurant, we pay less than $2/lb wholesale and people lose their freaking minds over how good it is. It is far and away the most popular dish on our menu and that is largely because when first timers come in, the typically say, "Well, my friend who recommended this place said at least one of us has to get the steak.
