Lana's Chicken 6 bonless ckicken breast 1 1/4 cup chopped cooked shrimp 1/2 to 3/4 cup soft butter 1/4 cup chopped green onion 1 cup flour(salt to taste) 1 1/4 teaspoon baking powder peanut oil or veg oil(canola oil) Pound chicken to 1/4" thickness. Combine shrimp, butter, onions and 1 1/2 teaspoons salt. spoon onto breast(kinda in middle-don't spread), roll-up and secure with toothpicks. Refrigerate for several hours. Heat oil in large fry-pan(oil should cover about 1/2 to 3/4 of rolled breast). Mix flour, baking powder, 1 teaspoon salt and 3/4 cup water. Dip breast into mixture and fry 10-15 minutes(flip about 1/2 way through). It's fabulous-Bon Appetite and Enjoy.
