IMHO, economic models by necessity have to start with an assumption of "holding all other factors constant" and then trying to zero in on how well certain factors explain things. Obviously, in real life it is impossible to "hold all other factors constant". But I don't think this is unique to economics - it's probably used a lot in psychology and sociology and many other branches of social science.
