detlef Posted November 18, 2010 Share Posted November 18, 2010 I've braised my share of beef/pork/veal cheeks if that's what you're asking. Maybe the tastiest braised meat going. Keep the fire going for about an hour and let it render down to coals. put the cow head in either a large kettle with some aromatics or wrap in tin foil and place on a steel grate that is elevated above th stones and coals.
