Jimmy Neutron Posted January 21, 2012 Share Posted January 21, 2012 I love this quick dish a couple times a week - see how your blood sugar reacts before going full tilt. 1 can black beans - rinse to shed sodium if desired 1 onion 3 garlic cloves 1-2 fresh tomatoes 1/4 cup of fresh corn Spices of choice - I like cumin, cayenne, black pepper and a little coriander. Sautee the onion in a little olive oil and throw the rest in based on how well you want each cooked. The beans have a lot of carbs, but do not spike my blood sugar at all.
