Bier Meister Posted March 24, 2010 Share Posted March 24, 2010 for scooby and chavez....... 5 garlic cloves, minced a 16- to 19-ounce can chick-peas, rinsed and drained 1/3 c well-stirred tahini 4 tbs fresh lemon juice 2 tbs olive oil 1 tsp ground cumin 3 tbs water 3 tbs minced fresh parsley leaves throw garlic, chick-peas, tahini, lemon juice, oil, and cumin into a food processor, scraping down side, until smooth. Add water, parsley, and salt and pepper to taste and pulse until just combined. a variation to that is using white beans, a couple of tbs of white vinegar, and rosemary. an asian twist: 1 garlic clove, peeled about an inch of pelled ginger 2 c garbanzo beans (chickpeas; from two 15-ounce cans), drained, 3 tbs liquid reserved 1/4 c cashew butter 3 tbs unseasoned rice vinegar 1 1/2 tsp soy sauce 1/2 tsp chili-garlic sauce 1/2 tsp freshly ground star anise 1/4 c chopped cilantro 1 green onion, chopped mince garlic and ginger in food processor. add beans, reserved bean liquid, cashew butter, rice vinegar, soy sauce, chili-garlic sauce, and ground star anise. process mixture to coarse puree. add cilantro and green onion. process to combine. Although my saying it was stuck in the idea phase was less "I can't find a recipe" and more "I'm just too f'in lazy to do it." no problem.... also, like most techniques, once you learn it...you can play. i've done one with tomato, basil, garlic.... lemon, mint, rosemary.... peanut, ginger, garlic... etc... pick your flavor profile.
