I actually enjoy this show if the challenge item is something I like or am interested in learning how to make. This particular side dish, which is extremely simple, came from the meatloaf throwdown. It is simply Peas with Onion and bacon (well, to be fair, the recipe calls for pancetta and shallots, but I didn't have either at home) SImply crisp the bacon in a deep frying pan. Since you want small cracklins, Ilike to put the bacon in the freezer for about 30 minutes, as that makes it easier to slice into small chunks. COuld also do this after cooking I suppose, ut cooks quicker in the small chunks. Fry the bacon until it is crisp and remove from pan and place on plate with a paper towel. Add a chopped onion to the pan and let it absorb the delicious bacon flavor (I added a little garlic the second time I did this). Once the onion is soft, add some crushed red pepper to give the dish a bit of kick, and add in a bag of frozen peas. Once the peas cook through, add the crisp bacon into the dish, stir it all together, let the flavors come together and serve. It is very tasty.
