untateve Posted November 19, 2005 Share Posted November 19, 2005 4 cups hot sauce (your choice) 4 cups brown sugar 4 tbs white or cider vinegar 2 sticks of butter Combine ingredients and bring together on stove. RUB 1/2 cup black pepper 1/2 cup granulated sugar 1/2 cup italian seasoning 1/2 cup garlic powder 1/2 cup chili powder 1/2 cup paprika 1/2 cup dried rosemary 2 tbs red pepper--more or less, depending on the heat you desire This is enough for 7-9 lbs of wings. Thoroughly pour some sauce on wings. I usually put the wings in a bowl, pour sauce on them and mix with my hands. THOROUGHLY--THOROUGHLY coat rub on the wings. Wings go onto a grill or smoker. Cook them at low heat (I usually do 190-200 degrees, indirect cooking). Every 15 minutes or so, I baste them with the sauce. Cooking time is usually around 3 hours. If you want/need a little char on the skin, cook them over direct heat for last 15 minutes or so. Serve with a fine ale and blue cheese.
