Rovers Posted April 8, 2007 Share Posted April 8, 2007 (edited) OK, so what do ya do with the Easter eggs after the kids have found em? This year, I decided to try my hand at pickling them. After looking at quite a few recipes, I went with 2/3rd Vinegar, equal parts Malt, cider and red wine vinegar, 1/3rd water 1/2 cup Juice from pickled beets pickled beets Giardiniera 5 cloves garlic Thick sliced sweet onion Hot Jalepenos, halved, sliced lengthwise 12 hard boiled peeled eggs about 3 tablespoons of brown sugar Steeped the vinegar, water, beet juice with brown sugar and cloves for 8 minutes, (I also added some chopped garlic and whole black peppercorns) low heat, and cooled. Put a thick slice of onion at the bottom of a Ball (mason) jar. Then a few slices of beets, a clove, some giardiniera, a few eggs (hard bolied and peeled) repeat until jar is full. I tossed in some more whole black peppercorns. Fill with vinegar/water, cap and into the fridge. Never tried making this myself before, but have had some pretty good pickled eggs at several places, including some pubs in London. yeah.... flatulence is inevitable, but these bad boys should be a nice bar snack with a brew er two. Just haven't made my own. I may now. Been brewing a little this spring. Nothing fancy, just some extract batches. May need to pickle some eggs to go with the pale ale that was just kegged. Man, I remmeber the old extract days.... two brew pots of scalding wort, 7 gallons in each, and I humped them down two small flights of stairs to the basement for chilling. Yeah, by myself. had to get serious adrenaline flow goin for that. That was 6 years ago.... could never do it now... I use pumps and chit! lol.... Been using ones from Williams Brewing, with satisfactory results so far. My buddy and I had to really cut back on the brewing when we both started families. Now that the kids are a little older, we are getting back into it. Right now the extract is easy, as we can set up the king cookers outside while the kids play on the swingset. As long as we pay attention when the boil gets close, its a piece of cake and we can help retrieve soccer balls, etc. We did dig out a chiller and lauter tun from my garage last weekend though. I think they need more time... tasted like malt vinegar and, well, a hard boiled egg. Not bad at all, but not as much flavor as I had hoped.
