PantherDave Posted October 4, 2006 Share Posted October 4, 2006 Well we are having some people over for the games this Sunday, and I'll be grilling some Strawberry Grouper that was caught locally by one of the couples. We will be having some late season Silver Queen corn roasted on the grill as well, plus a nice pot of collard greens. Everyone wanted a nice chowder along with it, so I decided to do this crock Manhattan base chowder. This could be eaten as a meal itself, so let's do some chowder this week shall we..... Manhattan-Style Clam Chowder To save time and retain nutrients, leave the peels on the potatoes. Simply scrub them and cut into cubes. Prep-20 min Cook-low 8hrs/High 4hrs Slow-cooker-3 1/2 -4 qt 2- 6 1/2 oz cans of minced or one 10 oz can baby clams 2-medium potatoes, cut into 1/2 inch cubes 1-cup chopped onions 1-cup chopped celery with leaves 1/2-cup chopped green pepper 1-14 1/2 oz can Italian-style stewed tomatoes 1 1/2-cups hot-styletoamtao juice or hot veg juice(hot and spicy V8) 1/2-teaspoon dried thyme, crushed 1-bay leaf 4-slices bacon, crisp cooked, drained, and crumbled, or 1/4 cup cooked bacon bits Step 1-Drain clams, reserving liquid( about2/3 cup). Place clams ina small bowl; cover and chill Step 2-In a 3 1/2-4 qt slow cooker combine reserved clam juice, potatoes, onions, celery, green pepper, undrained tomatoes, V8 juice, thyme, and bay leaf. Cover; cook on desired setting. Step 3-If using low heat method, turn to high setting for fianl 10 min. Stir in clams. Cover and cook 10 mins more. Discard Bay leaf. Ladle soup into bowls. Sprinkle each serving with bacon. Now for some football, I look for the Eagles to take down the Boys in the TO Bowl Eagles 27 Boys 17 Good Luck on the Homer Front and FF wise!!! PantherDave Posted October 8, 2006 Author Share Posted October 8, 2006 Well, I highly recommend this chowder recipe, we are killing it while watching the Boy's and Eagles. The east coast nor'easter has worked itself down the coast, so no grilling tonight. Thank goodness for the Jenn-Air, as I'll put the grill attachments in, and will cook the Grouper inside and we will slap the corn in the wave. The collards have been done since about 4:30 and our dinner guest-yanks from Philly gave them a try and like them. I once again suggest huddlers cook up this chowder-outstanding. twiley Posted October 11, 2006 Share Posted October 11, 2006 (edited) I made a simple crab chowder mac last night. 3 or 4 strips of bacon Medium onion - chopped 2 celery ribs - chopped Half a red pepper - chopped Cup of chicken stock Cup of whole milk, you could use heavy cream instead 2 cups of shredded white cheddar A tbsp or 2 of fresh thyme 6oz can of lump crab meat Corn (fresh or frozen) about a cup Cayenne pepper Chives Cook the bacon until crisp, add onions & celery and a little olive oil until opaque, add peppers and cook for another few minutes. I added some flour, maybe a tbsp at this point to thicken it up a little, then I added the milk, chicken stock, and corn. Once it started to bubble I added the cheese and thyme and then threw in a few pinches of cayenne pepper. Also, season with a salt and pepper to taste. I let that cook for another 5 minutes or so then served over a bowl of pasta shells (cooked of course) and garnished with some chopped chives.
