Farro is a grain, sort of like a primitive wheat that was popular around the Mediterranean in ancient times that was later replaced by other grains because Farro is harder to harvest and yields less than traditional wheat. But I just love this stuff. I cook it in a pot of 2.5:1 Chicken stock to Farro for about 30 minutes or so. Kinda chewy, kinda nutty. Great on salads, a replacement for rice in risotto, etc.. I eat it almost every day. I buy it in 5 pound bags for around $40 or $50 so it is not cheap. It is imported from Italy. Has anyone tried it? I like to cut up whatever kind of meat I have on hand and mix it with Farro for a hash-like equivalent. It is also really good with parmesan cheese, fried up with marinara and eggs. I feel so much better now that I have admitted this. Farro. Superfood. Better than cheez-its.... at least healthier. I just take 2 cups of farro and simmer it in 5 cups of chicken stock that has a bit of worchestshire sauce and red wine vinegar added and cook it for 30 minutes. Add some parmesan cheese afterwards. For the farro, those numbers indicate it should be closer to 258 calories per cup, and for the quinoa, it should be 240 calories per cup.
