Bier Meister Posted November 11, 2021 Author Share Posted November 11, 2021 2 oz of olive or canola oil ( i used butter) 2 oz flour 5 celery stalks, small dice 1 onion, small dice 1 green bell pepper, small dice (I used a red) about 24 shrimp (21-25ct) 1 lb chicken, diced 1 lb andouille sausage, sliced 2-3 tbs cajun seasoning (to taste) 8-10 cloves of garlic (minced) 3 bay leaves chopped tomatoes (32 oz can) 2 tbs worchestershire 1 1/2 c rice 4 c chicken stock s,p, hot sauce to tastes Heat the oil or butter in a large stockpot set over high heat. Add the celery, onions and peppers, and sauté until tender, 4 to 5 minutes. Meanwhile, combine the shrimp, chicken and Creole seasoning in a large bowl and stir to coat. Add flour to make the roux. Cook for 3-4 min. Add the garlic to the stockpot, and sauté for 1 min. Add the bay leaves, tomatoes and Worcestershire. Add the rice and stir to coat in the oil, then stir in the stock. Bring to a boil and reduce to a simmer. Cook, stirring occasionally, until the rice is tender and absorbs some of the liquid, about 15 minutes. Add the chicken, shrimp and sausage to the stockpot, and cook until the meat is cooked through, 10 to 15 minutes. Season with salt, pepper and hot sauce.
